BEECH SMOKED MACKEREL BREAKFAST 
Serves 2
INGREDIENTS 
2 x Luss Smokehouse Beech Smoked Mackerel 
2 x Large Eggs
2 x Large Slices Soda Bread
Olive Oil
Red Wine Vinegar
Fresh Chives
METHOD
 
1. Bring 2 pans of salted water to the boil and preheat your grill.
2. Poach the eggs in the boiling water for 3 minutes for a slightly runny yolk.
3. Toast the soda bread, then drizzle with a little oil.
4. Place on a plate and top with flakes of the mackerel, a splash of vinegar and a poached egg. Season well, then finely chop and sprinkle with chopped chives.
