125g ricotta cheese
40g cream cheese
1 tsp tomato puree
125g smoked salmon trimmings (chopped)
1 tblsp balsamic vinegar
salt and pepper
1 large roasted red pepper
2 tblsp chopped basil
1. Blend the ricotta, cream cheese and tomato puree until smooth.
2. Add the chopped salmon, balsamic vinegar, a dash of salt and pepper. Blend slowly until almost smooth, but leave a little bit of texture.
3. Finally, dice up the roasted red pepper and stir into the salmon mixture with the chopped basil.
