Kirstin's Scrambled Egg & Smoked Salmon Sunday Breakfast

Kirstin, our marketing assistant, told us she treats herself every Sunday with scrambled eggs, toast, our Beech Smoked Salmon and if shes really feeling generous... will drizzle hollandaise sauce on the top and maybe even throw some avocado in there! Sounds simple, but goes down a treat!
Method: 
.
1. Whisk up eggs, milk and a tiny bit of salt and pepper. Once all mixed together, pour into a pan and start stirring until the mixture starts to become fluffy. 
.
2. Pop some toast or a toasted bagel onto a plate, followed by your eggs, lay the salmon on top (and hollandaise sauce if you're being extremely fancy) and there you have it!

Morgan's Creamy Hot-Smoked Salmon Tuesday Night Dinner Pasta

Morgan, our shop assistant, told us that on weeknights she likes to make something quick and easy for dinner... So on a Tuesday its Pasta night! 
.
Method: 
.
1. Cook the pasta in boiling water as required on the packet. Once cooked and drained, pour in a tub of double cream and season to taste (we can worry about the calories later...).
.
2. Add in some Parmesan and our flakes of Beech Hot-Smoked Salmon. Stir gently until all ingredients are mixed in together. 
.
3.You're ready to serve! For extra flavour and texture, sprinkle some pine nuts over the top and a side of salad.

Shona's Healthy Smoked Trout & Jersey Royals Salad Combo

Shona, our Production Supervisor, has told us she's been trying to eat healthy, in time for summer... so this has been her 'Go-To' dinner recently and its DELICIOUSLY FRESH! 
.
Method: 
.
1. Boil the potatoes in water for 10-15 minutes until cooked and then drain. Once cooled slice them up into thin slices. 
.
2. For some flavour, Shona likes to mix together: tarragon, shallots, red wine vinegar, oil and seasoning. For extra texture, throw in some green beans or peas.
.
3. Serve the potatoes on a bed of spinach or what ever salad mixture you like and finally, top with slices or cut up pieces of smoked trout. 
.
