Salmon and Trout Recipe Inspo

Starting with a deliciously creamy Smoked Salmon and Fennel Soup, the ideal dish for a lunch menu! All you need for this is 200g of our Smoked Salmon, 25g of butter, 3 sliced fennel bulbs and 120ml double cream. 
Firstly, melt the butter in a pan and add the 3 sliced fennel bulbs and 5 tablespoons of water, then cook over a low heat for 20 minutes. Next, stir in another 5 tablespoons of water and 50g of the Smoked Salmon, transfer to a blender and blend until smooth. Pour the mixture into a pan and add the double cream and 250ml of water. Once it's all nice and hot, pop into a bowl and garnish with chopped Smoked Salmon and season to taste.
From our experience, we think this soup tastes EVEN BETTER with some of our delicious pate spread over oatcakes! 
We often have a lot of people asking what they should eat with our famous Smoked Trout. We think that the best way to taste the fishy flavours is with a healthy, fresh salad so our next favourite is a Smoked Trout, Apple and Pecan Salad. For this you're going to need: 200g of our Smoked Trout, 3 tablespoons of lemon juice, 1 tablespoon of horseradish, 2 tablespoons of white wine vinegar, 1/4 chilli powder, 1 tablespoon olive oil, mixed salad, 1 large sliced apple, 1 cup of sliced red onion and 2 tablespoons of toasted pecans. 
Firstly, mix together lemon juice, horseradish and chopped Smoked Trout then leave to chill for 20 minutes. Next, sprinkle the trout with a pinch of salt and pepper. Whisk together the 1/4 tbsp of salt, 1/4 tbsp of pepper, oil, chilli powder and white wine vinegar. Add in the salad, apple and onion and toss gently. Finally pop in the coated Smoked Trout and sprinkle with pecans! 
This one has a lot of ingredients, but trust us... it's worth it!
